Though famous throughout the world for wool production, the Icelandic breed is predominately grown for meat in Iceland. Since the cool and wet climate precludes the production of most grains in Iceland, the breed has been selected to bring the meat lambs to slaughter weight off of the summer and fall pastures.

The Icelandic breed is considered a mountain breed, and historically mountain breeds have been milder in flavor, and leaner than the lowland breeds. The meat is indeed very tender with a mild flavor, and is generally described as gourmet meat. With the leaner, European style carcass, and the mild flavor, Icelandic lamb can appeal to the palate of even those consumers who avow they "just don't like lamb."

Each fall we offer our organic 100% grass fed pure , gourmet ICELANDIC LAMB for sale. Our pure Icelandic lamb is perhaps the mildest, most delicious lamb you will ever taste.  With a fine, delicate grain, grass fed lamb is prized as a gourmet meat by chefs and lamb lovers all over the world.  Our lambs are grown on mother's milk and our organic pastures only (no grain, ever) and free from artificial growth hormones and antibiotics..  Our lamb is as healthy as it is tasty!  Born in April, he lambs range with their mothers solely on pasture from May to mid-November. 


Our lamb is processed at Northeast Kingdom Processing, a USDA certified state of the art facility in Lydonville, Vermont.  NEK Processing is certified for organic slaughter and processing, as well as Animal Welfare Approved.


We offer lamb either by retail cuts or by the whole animal cut to customer specifications and vacuum packed for your ease. In September, we will send out cut sheets to our fall lamb customers. A guide to lamb cuts is below. Contact us for more details.
